ELABORATION
The wine Dominio de Tares Bembibre is produced from the Mencia grape variety grown in six vineyards of over 60 years. The vineyards are situated on terraces and slopes with 20% inclination. The soils are of decomposed gravel and slate. The yield per hectare is minimum and produces grapes of enormous concentration, adequate ripeness and great balance between concentration and acidity.
The harvest begins on 15th September and is done manually, placing the grapes in cases of 15 kilos.
Once the grapes are in the winery, the bunches are selected by hand, eliminating all those not complying in appearance or ripeness to the requested standards. After a slight pressing and total separation of stems, the process of maceration takes place during 25 days with daily intensive stirring favouring the extraction of aromas and polyphenols.
Once this process is over, the wine is transferred to American oak barrels (Missouri) in which the alcoholic fermentation is finalized and where the malolactic fermentation takes place with the lees.
During January it is further transferred to French oak barrels (Allier) for ageing during 15 months before bottling.

The Mencía grape can be seen as the axis around which all Bierzo wine making revolves. Few grape varieties better express the terroir of a region of calcareous clay and slate substrata. The “mineral” grape par excellence, until recently it was erroneously disdained for having poor ageing potential and lacking colour. Nothing could be further from the truth. Now enjoying unparalleled popularity, its combination of fruity and mineral characteristics, in harmony with the contribution of new French and American oak, have shot the Mencía grape into the limelight as a star in its own right. Mencía wines stand out on the international stage among other Spanish grape types for their elegance and individuality, along with the world’s very best.
