ELABORATION
The meaning of “Cepas Viejas” is old vines of Mencia variety grapes of over 60 years old, grown on terraces and slopes of gravel and slate soils. These vineyards feature low yields which do not exceed 4,000 kilos per hectare and produce grapes with thicker and tougher skin and with lower water content in the grape pulp. These conditions favour the production of high quality wines.
The best grapes are chosen for the production of this wine when they reach the required ripeness stage which offers a good phenolic concentration without any loss of vivid acidity, finally offering great freshness to the wine. The harvest begins on the 15th September with the picking of grapes which are immediately taken to the winery in small lots of 15 kilos, avoiding any type of damage of the grapes. The best grapes are then selected by hand; the stems are removed and they are further lightly pressed.
The maceration process lasts three weeks, during which the must is stirred daily so as to extract all the possible flavours and aromas.
When this process is finalized, the wine is then decanted into American oak barrels (Missouri and Virginia) and French oak barrels (Allier and Nevers) where alcoholic and malolactic fermentation takes place. The wine is aged in these barrels for 9 months.

Mencía 100%

The Mencía grape can be seen as the axis around which all Bierzo wine making revolves. Few grape varieties better express the terroir of a region of calcareous clay and slate substrata. The “mineral” grape par excellence, until recently it was erroneously disdained for having poor ageing potential and lacking colour. Nothing could be further from the truth. Now enjoying unparalleled popularity, its combination of fruity and mineral characteristics, in harmony with the contribution of new French and American oak, have shot the Mencía grape into the limelight as a star in its own right. Mencía wines stand out on the international stage among other Spanish grape types for their elegance and individuality, along with the world’s very best.
TASTING NOTES
TASTING NOTES:
One can appreciate all the subtlety and elegance of the Mencía grape.
Visually it is an attractive cherry red colour, with violet tones around
the rim. In the nose it offers strong fruity aromas of raspberries and
cherries, as well as flowery hints of violet, which form a harmonious
ensemble with the wood with hints of liquorice, chocolate, toffee,
vanilla, and spices. In the mouth it is smooth, full bodied, and elegant,
with the characteristic traits of the Mencía grape blended with the
toasted flavours of the oak casks noticeable in the retronasal.
It has a long and smooth finish.We recommend serving at 18ºC in a
fine large round glass.
