ON THE WINERY |

Our production premises are equipped
to provide comfort at work and maximum hygiene. The technological
equipment level has been provided to carry out the most modern
production techniques.
There is a complete air-conditioning
system in order to assure the best temperature and relative humidity
conditions.
There are 36 stainless steel deposits where each vineyard is vinified under unique
conditions and assisted by a cool/heat system to control the temperature of each
process as much as possible.
The wine is passed on to the barrels placed below and up-dated micro oxydizing
equipment; manual selection of the grapes, and an extense technical assistance,
permanently assures the quality of the grapes received in our winery.
During the harvesting period, the grapes are received in the production
premises where they reach optimum temperature to commence the process
and control the quality bunch by bunch. Further, they are slightly
cleared of stems and crushed before going into stainless steel
deposits.
Our white wine Dominio de Tares Godello, previously fermented in
barrels, will begin maceration under cooling in order to assure
the highest aromatic potential of this variety.
Later, the Godello wine will pass on to new French oak barrels
for fermentation and “battonage” process.
As far as the Tinta Mencia variety is concerned, after removal
of stems and crushing, the alcoholic fermentation process begins,
whereby the best of the fruit will be extracted. This maceration
process takes place vineyard by vineyard in order to obtain the
maximum expression of each of these vineyards.
Some of the
plots will finalize fermentation in new barrels and the rest of
the plots will go on to different barrels to complete ageing once
the fermentation process is finalized. |
