State of the art technology, a manual
selection table, controlled temperature stainless steel tanks,
using gravity to decant the wine from the tanks to barrels rather
than pumps, scrupulous hygiene controls, and great care and loving
attention at every single step of the wine-making process; all
these factors help make our wines very special indeed.
When the grapes arrive at our bodega, they are kept at a low temperature,
and strict quality controls are carried out at the manual selection
table. They are then gently destemmed and lightly pressed before
passing into the stainless steel tanks. Here the white Godello
grapes begin a cold maceration process, while the red Mencía
grapes begin their fermentation process, the precise details of
which depend on the harvest and exactly which plots the grapes
have come from.
Our Godello grapes ferment in new French oak casks. The red Mencía
grapes are put into separate tanks for each plot, where they are
macerated and undergo alcoholic fermentation, later they are put
into oak casks for the malolactic fermentation and subsequent ageing
process. |
